Certificate of Attainment – Hospitality and Tourism

This basic training course, in all aspects of the Hospitality and Tourism industry, offers the student an opportunity to prepare for a career in the tourism industry. Combining skills in food and beverage delivery, basic cooking, tourist attention, and small business skills, this course will provide a pathway towards a wide range of employment opportunities. The knowledge acquired could also assist students to prepare for self-employment enterprises and the creation of small hospitality and tourism related businesses.

Course Delivery

  • Location: Ainaro Vila Community Centre
  • Duration: Teaching time will be 3 hours a day, 5 days a week, equalling 120 hours.
  • Fees: There are no fees for this training course. HATTS is a Not-for-Profit, funded by public donation and delivered by volunteer teachers.
  • Delivery: Training and class work will be face to face and conducted in English. There will be an opportunity for English language assistance.

Course Entry Requirements:

  • Must be a resident of Ainaro Province.
  • Aged over 15 years.
  • Pass a Language, Literature and Numeracy assessment.

Course Content

Food, Beverage, Front of House:

  • Basic Food Safety for Food Handlers.
  • Working effectively with others.
  • Meet and Greet – Interactions and first impressions.
  • Occupational Health and Workplace safety.
  • Service of Food and Beverages – Waiting on table.
  • Processing bills and other reception skills.
  • Front of house Cleaning and Hygiene

Tourism:

  • The Principles of Travel and Tourism.
  • Business Opportunities in the Tourism Sector.
  • Provide visitor information as a service.
  • Taking reservations and other office skills.
  • Costings and Quotes.
  • Occupational Health and Work safety.
  • Source travel and tourism related information.

Kitchen Skills and Back of House:

  • Use of food preparation equipment.
  • Kitchen cleaning and hygiene.
  • Prepare stocks, sauces, and soups.
  • Clean and sanitize work areas.
  • Food handling and safe food storage.
  • Preparing eggs and pasta.
  • Prepare salads and sandwiches.
  • Baking – cakes, bread, pies.
